Kenapa Minyak Goreng Tidak Boleh Dipakai Lebih dari Sekali?

Tahukah anda kenapa minyak goreng yang telah dipakai memasak tidak baik untuk dipakai lagi?

Alasannya adalah karena saat pemanasan (dipakai) untuk kedua atau ketiga kali, struktur asam lemak yang dikandung minyak goreng bisa berubah dan berakibat buruk bagi tubuh kita.

Di dalam minyak goreng terkandung asam-asam lemak baik yang jenuh (tidak memiliki ikatan rangkap) maupun yang tak jenuh (memiliki ikatan rangkap) yang bagus untuk tubuh adalah asam lemak tak jenuhnya. Makanya di iklan minyak goreng selalu disebut-sebut mengandung asam lemak tak jenuh ganda. Tapi asam lemak tak jenuh yang sering dipanaskan apalagi dalam suhu tinggi dapat memicu terjadinya isomer geometri di sekitar ikatan rangkap pada senyawa asam lemak tak jenuh.

Di alam, konfigurasi di sekitar ikatan rangkap umunya cis dan sedikit yang berstruktur trans. Namun dengan pemanasan dapat meningkatkan jumlah asam lemak trans (Trans Fatty Acid / TFA). Terus apa efeknya asam lemak trans bagi tubuh? Menurut penelitian TFA memberikan efek yang lebih buruk dibandingkan asam lemak jenuh dan kolesterol dalam menyebabkan berbagai penyakit seperti jantung koroner dan aterosklerosis.
